How to Make Daal

Daal is a comforting and nutritious Indian dish made from lentils. To prepare it, rinse one cup of lentils (toor, moong, or masoor) thoroughly. Boil them with 3 cups of water, salt, turmeric, and a pinch of asafoetida until soft. In a separate pan, heat oil or ghee, add mustard seeds, cumin seeds, chopped onions, garlic, ginger, green chilies, and tomatoes. Sauté until fragrant, then mix this tempering into the boiled daal. Simmer for a few minutes, garnish with fresh coriander, and serve hot with rice or roti.
