How to Make Lemon Achar: Tangy and Spicy Pickle

Lemon achar is a traditional Indian pickle with a tangy, spicy flavor that pairs perfectly with meals. It’s easy to prepare and lasts for months when stored properly.

Ingredients:

  • 8–10 lemons

  • 2 tbsp salt

  • 1 tbsp turmeric powder

  • 2 tbsp red chili powder

  • 1 tbsp mustard seeds

  • ½ cup mustard oil

Method:

  1. Wash and dry lemons completely. Cut them into quarters.

  2. Mix salt, turmeric, and chili powder with the lemons.

  3. Heat mustard oil until smoking, cool slightly, then add mustard seeds.

  4. Pour the oil over the lemons and mix well.

  5. Store in a clean, dry jar for 10–15 days, shaking daily for even flavor.

Tip: Keep the jar in sunlight during the curing process for a richer taste.
