How to Make Aachaar (Pickle) – A Short Guide

Aachaar, or Indian pickle, is a tangy, spicy condiment made from fruits or vegetables preserved in oil and spices. To make a basic mango aachaar:

Ingredients:

  • Raw mangoes (2–3, chopped)

  • Mustard oil (1 cup)

  • Salt (2 tbsp)

  • Turmeric (1 tsp)

  • Red chili powder (1 tbsp)

  • Fennel seeds, mustard seeds, and fenugreek seeds (1 tbsp each)

Method:

  1. Wash and dry the mango pieces thoroughly.

  2. Mix all spices and salt with the mango pieces.

  3. Heat mustard oil, cool it slightly, and pour over the mixture.

  4. Store in a clean jar and keep in sunlight for 5–7 days, stirring daily.
