1 medium potato (peeled and diced, optional)
1 sprig curry leaves
½ cup roasted peanuts
Spices:
1 tsp mustard seeds
½ tsp turmeric powder
½ tsp cumin seeds
Salt to taste
½ tsp sugar (optional, for a mild sweetness)
For Garnishing:
Fresh coriander leaves (chopped)
Lemon wedges
Sev (optional, for extra crunch)
Oil:
2–3 tablespoons of oil
Step-by-Step Method
Step 1: Preparing the Poha
Take the flattened rice in a sieve or strainer.
Wash gently under running water for a few seconds.
Drain the water completely and let it sit for 5–10 minutes to soften.
Add a pinch of salt and turmeric powder to the soaked poha and mix lightly.
Step 2: Frying the Peanuts
Heat oil in a pan.
Add peanuts and fry until golden brown.
Remove and set aside for garnishing.
Step 3: Making the Masala Base
In the same oil, add mustard seeds and cumin seeds.
Once they splutter, add curry leaves, green chilies, and onions.
Sauté the onions until they turn translucent.
(Optional) Add diced potatoes and cook until soft.
Step 4: Mixing Poha with Spices
Add the softened poha to the pan and mix gently.
Sprinkle sugar (optional) for balancing flavors.
Stir lightly to avoid breaking the poha.
Cover and cook on low heat for 3–4 minutes.
Step 5: Garnishing and Serving
Add roasted peanuts back to the poha.
Garnish with chopped coriander leaves.
Squeeze fresh lemon juice before serving.
(Optional) Top with sev for a street-style touch.
